Tomato Bisque Soup

This recipe is the best plant-based tomato bisque you'll ever eat, loaded with veggies and herbs to make it thick and creamy, without heavy cream. 

What makes this tomato bisque soup so delicious?

This soup starts with whole organic canned tomatoes. Onions, carrots, and celery are added to give this soup a thick and hearty texture with a slightly sweet flavor. Fresh basil and rosemary give this soup an earthy note. Then it is finished off with oat milk instead of heavy cream, making this soup a healthier option than regular tomato bisque. 

Tomato Bisque Soup Ingredients

Tomatoes

Canned tomatoes contain iron and the antioxidant lycopene which is easier for your body to absorb due to the canning process. Tomatoes also contain vitamin C, vitamin K, and potassium.

Carrots

Carrots contain beta carotene, biotin, vitamin K1, Potassium, B6, and fiber.  

Celery

Celery contains vitamin A, vitamin K, and vitamin C and is a good source of essential antioxidants. Celery can help reduce inflammation and support digestion. 

Onions

Onions are loaded with vitamin C and antioxidants. Red onions have been known to help lower bad cholesterol, promote cardiovascular health, reduce high blood pressure, and protect against cancer. 

Garlic

Garlic not only adds great flavor to foods but has excellent healing benefits. Throughout history, garlic has been used to treat various medical conditions. Garlic is packed full of vitamins and antioxidants and can help boost the immune system, and reduce cholesterol and heart disease.

Sweet Basil

Sweet basil contains vitamin A, vitamin K, calcium, iron, and manganese. Sweet basil doesn't just provide flavor but can help reduce stress and blood sugar levels. 

Rosemary

Rosemary is a healing herb, a good source of anti-inflammatory properties, and rich in antioxidants.

Olive oil

Olive oil is a healthy monounsaturated fat, and olive oil is full of antioxidants and may lower the risk of heart disease. Not to mention, olive oil contains anti-inflammatory properties. 


Immersion Blender

One of my favorite kitchen tools is an immersion blender. I use an immersion blender to make sauces, soups, and salad dressings, and it is a tool that is easy to use and clean. 

Immersion blenders can be used directly in a pot for soups and sauces or in a jar or bowl for salad dressings. 

If you do not have an immersion blender, you can easily use a standard blender for this recipe. If using a standard blender, be sure to follow the directions for blending hot ingredients at the bottom of the recipe.

Ingredients

Tomato Bisque Soup
  • 2 12 oz. can organic whole tomato
  • 1 cup diced onions about 1/2 onion
  • 1 cup diced carrots about 2 large carrots
  • 1 cup diced celery about 3 stalks of celery
  • 4 cloves chopped garlic
  • 1 1/2 cup plain oat milk can be substituted with any other milk of your choice
  • 1 cup fresh chopped basil
  • 2 tbsp. fresh chopped rosemary
  • 1 tbsp. maple syrup
  • 2 tbsp. olive oil
  • 1 tbsp. sea salt

Instructions

  1. Prepare ingredients. Dice onions, carrots, and celery. Finely chop garlic, basil, and rosemary.
  2. In a large pot, add olive oil, diced onions, carrots, and celery.
  3. Add salt and sauté on medium-low heat for about 10 minutes or until the vegetable are soft.
  4. Add garlic and sauté for 2-3 minutes.
  5. Add tomatoes to the pot and continue to simmer for 10-15 minutes.
  6. Add basil, rosemary, and agave to the pot.
  7. Remove from heat and use an immersion blender to blend all the ingredients into a smooth consistency.
  8. Add oat milk and maple syrup. Continue to blend until smooth.
  9. Place pot back on the heat and simmer on low heat for about 10 mins.
  10. Enjoy!

Notes

If using a regular blender instead of an immersion blender, it is important to use caution when blending hot foods to ensure you do not burn yourself. Follow these directions when blending hot foods.

  1. Be sure to only fill the blender jar halfway full.
  2. Remove the center piece of the blender lid. 
  3. Place the lid on tightly.
  4. Cover the lid with a clean kitchen towel. 
  5. Hold the lid and begin blending at the lowest speed.
  6. Gradually increase the speed as needed.
