Easy Asian Cucumber salad

This Asian-inspired cucumber salad is refreshing and a little spicy. I love making this cucumber salad to go along with whatever Asian-inspired dish I make.

Make ahead or eat right away

This salad can be made ahead or eaten right away. I personally like to make it ahead just a bit to allow the cucumbers some time to soak in all the yummy flavors.

I usually pop it into the refrigerator for 20 -60 minutes before serving and occasionally give it a quick stir to make sure all the cucumbers are getting equal love.

Cucumbers have high water content, making them refreshing to eat, not to mention low in calories. Persian cucumbers provide a good source of fiber, antioxidants, vitamins C and K, magnesium, potassium, and manganese.

Asian Cucumber Salad Ingredients

The ingredients are pretty simple, but the star of this dish is the cucumbers of course. This recipe calls for Persian cucumbers, but you could replace them with a Hot House cucumber. If using a Hot House cucumber, I would cut the cucumber into quarter slices.

Garlic

Sesame Oil

Honey

Sesame Chili Oil

Salt

How do make Asian Cucumber Salad

It is best to use cucumbers approximately the same size. Slice the cucumbers into about 1/2 inch slices. Put the sliced cucumber into a bowl and add about 2 pinches of salt. Add the minced garlic and stir together. Allow the cucumbers to sit for about 5 minutes.

After the cucumbers have sat for a few minutes, add sesame oil, honey, and chili oil to the cucumbers. Stir until combined completely.

You can serve the cucumbers immediately or allow them time to marinate in the sauce. If you are allowing them to marinate in the sauce, keep them in the refrigerator and stir occasionally.

If you are not a fan of spicy food, you can always reduce the amount of sesame chili oil.

  • 4 Persian Cucumbers
  • 1 clove of garlic sliced
  • 1 tbsp. sesame oil
  • 1 tbsp. honey
  • 1/2 tsp. sesame chili oil
  • 1/2 tsp. tamari (or soy sauce)
  • pinch of salt
